Make Mine a Camillo’s

From some of the best pizzas in town, to hearty carnivorous dishes, to delicate pasta, and scrumptious salads, there’s a bit of Italy in every bite at Camillo’s in the Capital.

With the advent of summer, sometimes it’s best to start the day early, with a hearty and savoury breakfast or brunch! Camillo’s Pizzeria at The Manor, in New Delhi, does just that and more. With dishes made from organic and locally sourced ingredients, Camillo’s, is at heart, a pizzeria, but with a large swathe of dishes to choose from – salmon, prawns, grilled chicken, to traditional lasagna, risotto, rigatoni, linguine, a couple of classics and Tex-Mex dishes thrown in – it’s our new favourite when it comes to Italian/North American fare.

Plating up an all-American breakfast of champions, savour fun classics, such as the Ham & Cheese Sandwich, paired with a variety of protein options and egg preparations. There are also fluffy waffles topped with whipped cream. You can always take the cereal route (Cornflakes/Muesli/Chocos) and fruit (watermelon/ banana/ seasonal fruit). Or you can try the Masala Omelette, and pair it with the 'Breakfast in a Bottle', beverages that will complement the dishes.

For brunch or any meal, what we personally loved was the wood-fired pizza – which is the heart of Camillo's culinary expertise. This pizza pays tribute to the Neapolitan cooking tradition, from southern Italy. The dough, a masterpiece with a 70% hydration ratio, undergoes a careful process of alternating hot and cold proofing, resulting in a crust that is light yet retains its shape. Paired with the San Marzano tomato sauce, the flavours come together in perfect balance. And let's not forget the selection of cheeses, a delicious trifecta of Danish, local, and Italian varieties.

We chose the Sundried Tomatoes and Basil, but you can choose from Wild Mushroom and Burrata, BBQ Chicken, Pepperoni, Caramelized Onion and Feta. These have got to be one of the very best pizzas we have ever eaten in the Capital.

Making the perfect dough, Neapolitan style

The Wild Mushroom and Burrata, has the perfect ratio of earthy notes and the creamy indulgence of burrata. For those craving a mix of sweet and savoury, the Caramelized Onion and Feta awaits. And for a taste of Italy, look no further than the Prosciutto Crudo. This dish delivers paper-thin slices of prosciutto on top of a perfectly baked crust.

Another must-try is ‘The Manor’ Caesar salad, which has so many layers of iceberg salad, croutons, parmesan cheese and dressing, that each bite is savoury and healthy all at once, as is the Burrata Salad with cherry tomatoes, and pesto sauce, with spiced pumpkin seeds sprinkled on top. The Avocado Taco, with roasted tomato salsa and sour cream, was another delicious surprise.

Adding final touches to the Tiramisu

For dessert, try the Tiramisu or the Basque Cheesecake. The Tiramisu, with its Langues de Chat biscuits drenched in coffee with generous dollops of mascarpone, is as indulgent as you can get, while the Basque Cheesecake, gives the mouth the perfect contrast from a burnished top layer, covering a light, smooth, creamy cake.
