Move over, wine and cheese. If you’re looking for that perfect accompaniment to your sophisticated cheese, pick up a dram and get inspired from some of the pairings below, to feature at your next gathering, or to savour just by yourself. Both whisky and cheese-making are sophisticated arts defined by traditions and time-honoured processes. Complex to master, but easy to enjoy – especially together – The Macallan’s range of flavour notes are the perfect complement to the rich creaminess of artisan cheeses. The Macallan is a single malt scotch whisky (to qualify as a single malt, it has to be made of 100 percent barley and brewed at a single distillery), founded in 1824, in the heart of Speyside, Scotland. The whisky is matured in oak casks from Spain and the US, from where it gets its natural colour.

Today, on World Cheese Day, we bring you four iconic whisky and cheese pairings, put forth by Elizabeth Chubbuck, American Cheese Society Certified Cheese Professional and Murray’s Cheese Senior Vice President, especially for The Macallan whisky.

The Macallan Double Cask 12 Years Old coupled with a Young Manchego

The Double Cask 12 Years Old could be coupled with a Young Spanish-origin Manchego because this rich, mellow sheep’s milk cheese cuts through the spice, raisins, and citrus notes (candied orange is one of them) within the Double Cask 12 Years Old, while improving the notes of creamy butterscotch, honey, and vanilla custard. It also pairs well with French sheep’s milk cheese or any earthy pecorino.
