Created in New York over a decade ago, as a tribute to the great Italian-American dining rooms of the 1950s, Carbone has become a fine dining staple in the Big Apple. Created by Chef Mario Carbone, Jeff Zalaznick, and Chef Rich Torrisi, Carbone has become one of the most celebrated Italian restaurants in America. The original restaurant on Thompson Street in New York combines old-school swagger (captains wear tuxedos designed by Zac Posen), with the highest quality ingredients, with Italian-American dishes straight from Little Italy.

Chef Mario Carbone’s iconic dishes from his childhood (inspired by both his maternal and paternal grandparents, and spending a year in Italy, just discovering its flavours), find pride of place at Carbone Dubai. The menu has his all-time favourites, such as the Caesar alla ZZ, Linguini Vongole, Chicken Massimo, Veal Parmesan and of course, the Spicy Rigatoni.

Naturally, a bevy of classic cocktails like: Mai-Tai, Mojito, Negroni, Manhattan, Old-Fashioned, Gibson, Daiquiri, and Margarita, accompany the menu of antipasti, soups and salads, pasta, fish, meats, and sides.

Carbone Dubai happened when Atlantis Dubai, in partnership with luxury hospitality company Major Food Group (MFG), brought the legendary restaurant to the über-luxe Atlantis The Royal. Its world-class, New York-style Italian menu has been wowing UAE diners for some time now, as it marks the group’s tenth Carbone location worldwide.

Inside Carbone Dubai, guests are transported to the golden age of glamour, where every element from tableside preparations to the charismatic service play a part in bringing the true experience to life. The dining room is elegantly adorned with chandeliers, a curated art collection, velvety jewel-toned nooks, leather banquettes, and damask-adorned walls with Venetian glass mirrors, while a sleek, elongated bar and plush, vibrant coloured seating create an inviting, social atmosphere.

Every detail of the interiors has been dreamt up by multi-award-winning designer Ken Fulk, in collaboration with Bishop Design to embody MFG’s identity. The result is a seamless, immersive atmosphere; a coffered ceiling in patinated metal tiles crowns the room with timeless elegance, instilling a sense of effortless familiarity.

At the heart of the restaurant lies a showstopping centrepiece – one of the largest jellyfish tanks in the world, stretching across an entire wall of the dining room. Guests may also choose to dine al fresco on the terrace, complemented by sweeping views of the Skyblaze Fountain Show. For more intimate gatherings, the restaurant offers a semi-private dining room accommodating up to 40 guests. Wine enthusiasts will also appreciate the extensive wine collection, showcasing over 450 labels, including rare vintages, boutique producers and Dubai firsts.

A luxury and fashion journalist with 25 years of experience in publishing and magazine journalism, I have edited some of India’s top fashion and luxury magazines. I got my BA in Comparative Literature from UC Berkeley, and went on to receive my Master’s in English and French from the University of Strasbourg, France. I have also studied German and Film.
